This little jewel is tucked up on the hill in the Target Shopping Center at the corner of Lincoln Avenue and Yosemite and I just have to share what incredible food and service they have there.

Appetizers & Salads

Try the Caprese Salad with sliced fresh mozzarella (they make it fresh ONSITE every morning by 11:00 a.m.) fresh tomatoes, fresh basil, mixed greens and arugula with balsamic vinaigrette. We’d never had fresh mozzarella before and WOW, it’s like entirely different food than the stuff that comes shredded in a bag.

Next up was the Artichoke Dip. It’s served with your choice of bread and/or veggies and is addictive. They have a weekend happy hour that includes this delicious option at a discounted price

Wine Specials

Let’s talk Wine! Via Baci has a nice selection of wine to accompany your meals including 4 different Pino Grigio Wine selections, but my personal favorite with the chicken parm is this St. Supery Sav Blanc. Every Tuesday & Thursday enjoy 40% off select wines by the bottle all day served at their nice bar area or at your table.

Pasta & Pizza

All of their pizza is fabulous as well as the pasta. Their Chicken Parmesan is the best I’ve ever tasted. Take a look at this picture below.

Two other favorites so far are the Lasagna and the Chicken Cavatappi. My husband enjoyed the Pumpkin Ravioli… really interesting flavor combinations.

Pizza

Our favorite pizzas are the Bianco Pizza and the Vesuvius. The Bianco is topped with Oven Roasted Chicken, Fresh Tomatoes, Goat Cheese, Sun-Dried Tomatoes, Fresh Basil, Roasted Garlic, Olive Oil and a touch of Red Pepper flakes to give it a little zip. The Vesuvius is topped with San Marzano tomato sauce, house-made mozzarella, spicy sausage, crimini mushrooms, caramelized onions, and fresh oregano. The crust is thin but not hard so you ALMOST feel like you are eating something healthy.. but it tastes too good for that to be true. They also have a gluten-free crust that gets good reviews.

Desserts

Don’t worry, we didn’t forget about Dessert. We haven’t had this deliciousness yet but the Tiramisu and Nutella Pizza are to die for!

They also have a very nice patio with a beautiful view of Denver. We aren’t the only ones who think this place is great. See these Google reviews too.

Douglas County Libraries closes branches in response to COVID-19

We’re Open For Curbside Pick-Up!
Our Park & Pick-Up curbside service is now open for pick-up of holds. If you’ve been notified that your hold items are ready, this service is for you. If you had items on hold before the library closed, you may pick them up through May 17 at your preferred DCL location. All other holds are available for pick-up as you get notified.

Pick-Up Hours:Monday-Thursday 9AM-7PMFriday-Saturday 9AM-5PMSunday 12-5PMLouviers: Tuesday 3-8PM; Saturday 9AM-12PM 
Follow these instructions for picking up your holds:
 
-Look for the flag denoting parking spaces set aside for this service.
-If all marked spots are full, please wait in your car for a space to become available. We will work as quickly as possible to serve you, but there may be a wait during busy times. Please be prepared.
-Keep your phone handy. Once you are parked in a numbered space, call or text the number on the sign with the required information.
-Health regulations prevent us from touching your vehicle. Please be prepared to open and close your own trunk for delivery of held items.

While DCL’s physical libraries are closed, customers can take advantage of the following digital resources and accommodations:

Borrowing, Holds & Fines Updates

  • All returned items are quarantined for the safety of our staff and community. Expect returned items to remain on your account for several days before they are checked in. No fines are being assessed.
  • All DCL book drops are open and accepting returns of checked-out items, except for our Louviers location. Due to DCL’s quarantine protocols, Louviers residents may return items to any other DCL location for proper quarantine of materials. Items borrowed before the library closure are due July 1. Due dates on new checkouts have been extended: 3-week checkouts now have 5-week due dates, and 1-week checkouts have 3-week due dates. No fines are being assessed.
  • Our Park & Pick-Up curbside service is available for pick-up of holds at all DCL locations. If you’ve been notified that your holds are ready, this service is for you. See the Park & Pick-Up instructions above.
  • Prospector and Interlibrary Loan will be unavailable as most other library systems are also closed.
  • Materials Request will be unavailable. Current items that are checked out will not come due or accrue fines during the closure.
  • Book Club Express kits may be picked up using our Park & Pick-Up service. See Park & Pick-Up instructions above.
  • Book donations will not be accepted during the closure.
  • We have increased cleaning and disinfection throughout our libraries, which will continue until we are advised that COVID-19 is no longer a potential threat.

DCL will post ongoing updates to its Community Safety Notice online and through its social media channels. See the library’s online Events Calendar to check the status of rescheduled events.

The Farmers Market in Parker celebrates its 15th Year on Mainstreet

Parker Farmers Market is held Sundays from Mother’s Day through Mid-October on Mainstreet. 
The road is closed to through traffic from 7:00 a.m. – 2:00 p.m.

Vendors prefer cash but many do accept local checks with I.D.

This market attracts a large and noisy crowd with lots of options for supporting local growers and artisans.

Among the treasures you’ll find each week are:

The Town of Elizabeth has a Farmers Market as well.

It runs from 8 a.m. to 1 p.m. June through September at the corner of Highway 86 and Main Street in Elizabeth.

Gluten Free Peanut Free Eating Options in Parker

More and more peanut and gluten allergies and sensitivities are coming up and families in Parker want to know where they can go out to eat and be safe. We had a tremendous response to this list and have added tips from local families.

Gluten Free:

Indochine Cuisine in the Parker Station building on Mainstreet maintains a gluten-free kitchen. Even their tempura and rolls are gluten-free. They can have vegetarian and vegan options on their menu.

Parker Garage has several Gluten Free options, and some can be made gluten-free with the switch of the bun.

Posh Pastries offers gluten-free bakery good and gluten-free flour is for sale there as well. (Not Celiac Safe)

Wave the Grain Bakery in Littleton delivers to “The Local” on Mainstreet and their offerings are delicious! They have savory & sweet treats.

Brickhouse has an entire gluten free menu, just ask your server.

Panera and Noodles have gluten free options.

Casa Mariachi – Just ask the server.

Panera has a few gluten-free salads and soups, check their website for the latest as they change seasonally.

Both Sprouts and Vitamin Cottage also have a large variety of gluten free packaged food as well as Kings, Safeway, Walmart and a large variety at Costco.

Suchine is a favorite of our family with celiac. We’ve had gf success at Dancing Noodle, Pho Vy, Opa’s Grill, and Chipoltle. Noodles also have GF options but are more limited, and the Wendy’s at Jordan & Lincoln can be really helpful in creating a GF meal in a pinch. There are several pizza places offering GF, but only a few try to be as allergy safe as they can. Those are Lil Ricci’s and Parry’s. Also, Coldstone does a great job of creating allergy-safe treats. We use them for kids’ birthdays and parties all the time.

Sweet ‘Ness cupcakes also has GF cupcakes. But, they are made in the same kitchen as the regular cupcakes are so not celiac safe.

Matt at Mauna Snoa Shave Ice says we are gluten-free, peanut-free, dairy-free. And it’s delicious!

In general most Mexican restaurants are peanut-free, we have some local moms writing up the lowdown on how to keep your kids safe when eating out.

Seared Elk Chop with Zinfadel Syrup and Red Grape Salsa – Recipe of the Month

This month’s Recipe of the Month is brought to you by the Executive Chef of the Pradera Country Club.

Seared Elk Chop with Zinfadel Syrup

Ingredients:

  • 1 rack of cervina elk or venison**
  • 2 cups zinfandel or primitivo (the Italian zinfandel)
  • 2 cups grape juice
  • Kosher salt
  • Fresh black pepper
  • Canola oil

Red Grape Salsa

Ingredients

  • 1 bunch seedless red grapes
  • 1 small handful cilantro
  • ½ red onion
  • 1 pinch brown sugar
  • 1 lime
  • 1 tablespoon canola oil

Elk Chop Directions:

  1. Cut the rack into chops (there should be seven bones protruding from a long strip of meat.
  2. Cut along the bone, through the meat, to create chops).
  3.  Season chops with salt and pepper.
  4.  Heat a cast-iron pan or sauté pan over medium-high heat.
  5. Add a few tablespoons or so of canola oil and sear chops until crisp and golden on both sides (meat should still be rare to medium-rare.  You can place them in the oven to increase the temperature, but it isn’t recommended).
  6. Reduce zinfandel by 1 ¾ cup over medium high heat, remove to room temperature

Red Grape Salsa Directions:

  1. Cut grapes in half
  2. slice the onion into thin strips
  3. rough-chop the cilantro
  4. combine with the juice of one lime, brown sugar, and canola oil.
  5. Place salsa over the top of the chops.

**elk is larger (about twice the size) than venison.  Venison chops make great appetizers, while a single elk chop is enough for an entrée.  If using elk, add starch (potatoes, rice, polenta, etc.) and a vegetable to make it a complete meal.

Chef Bio

Executive Chef Aaron Schultz’s prior experience includes the Woodmore Pines Country Club in Monument CO, Beaver Creek, in Avon, and Plum Creek Country Club in Castle Rock.

He then helped open The Club at Pradera in 2005 and continues to strive to meet every member’s expectations on a day-to-day basis. His passion lies in the artistic side of the culinary arts including paired dinners such as wine, beer, or spirits.

Parker Garage – Right on Mainstreet with the best Moscow Mules in town, owned by Broncos fanatics so make sure to wear your Orange & Blue! Upscale bar food served through dinner with Mule Monday’s for the Monday night games.
